Servings: 1 large drink (about 1/2 cup foam)
Course: Drinks
Cuisine: American

Ingredients

  • 1/4 cup heavy cream cold
  • 2 tablespoons milk cold, 2% or whole
  • 1 tablespoon brown sugar packed
  • 1 teaspoon molasses
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1 pinch sea salt
  • 1/2 teaspoon vanilla extract

Equipment

  • Handheld milk frother or a sealed jar

Method

  1. Add everything to a tall cup or small pitcher, cream and milk first.
  2. Froth with a handheld frother 45–60 seconds, until thick, glossy and pourable with soft peaks — or shake hard in a sealed jar for 60 seconds.
  3. Pour slowly over your iced drink, over the back of a spoon, so the foam floats in one layer.
  4. Serve right away. Optional: dust with cinnamon and add a mini gingerbread cookie.

Notes

Foam is best within the hour. For hot drinks, spoon it on instead  of pouring so it melts slowly.
