Starbucks’ Caramel Brulée Latte is the holiday drink people wait all year for — deep, almost-smoky caramel with a crackly brûlée sugar top.
The syrup is just caramel taken 30 seconds darker, plus the 2-minute crunch topping that makes it “brulée”. A batch costs about $1.50, versus $9 for a bottled syrup.
Brulée vs Regular Caramel Syrup
The difference is the darker cook: taking the caramel further gives it a bitter-sweet depth that regular caramel syrup does not have. A pinch of salt and vanilla, stirred in at the end, rounds it out. And the topping is non-negotiable — it is the brûlée.

Everything you need is in the recipe card below — a short pantry list for the syrup and the crunch topping.
Caramel Brulée Syrup + Crunch Topping
Ingredients
Method
- Syrup: put the sugar in a dry, heavy saucepan over medium heat. Let it melt undisturbed, swirling the pan occasionally, until deep amber like maple syrup, 6–8 minutes.
- Remove from the heat. Very carefully pour in the hot water a little at a time — it will bubble vigorously. Whisk until smooth.
- Whisk in the butter, vanilla and salt. Cool 20 minutes and bottle. It thickens as it cools.
- Topping: spread the 1/4 cup sugar in a thin layer on a parchment-lined tray. Broil on high (or torch) until amber and melted, 1–2 minutes, watching constantly.
- Cool completely, then crack into small shards. Store airtight.
- To serve: add 2 tablespoons syrup to a latte, cap with foam, and scatter shards on top. Serve immediately — the crackle lasts about 5 minutes.
Notes
How to Make the Syrup
Put the sugar in a dry, heavy saucepan over medium heat. Let it melt undisturbed, swirling the pan occasionally — do not stir — until it turns deep amber, like maple syrup.
Take the pan off the heat and very carefully whisk in the hot water a little at a time; it will bubble hard. Once the bubbling settles, whisk until smooth, then whisk in the butter, salt and vanilla. Let it cool before bottling.

Safety note: molten sugar is lava. Use a dry pan, keep kids away from the stove, and do not taste it while it is hot.
The Crunch Topping
Spread the sugar in a thin, even layer on a parchment-lined tray. Torch it until amber and melted, or broil on high for 1–2 minutes, watching it constantly — sugar goes from amber to burnt in seconds.
Let it cool completely, then crack it into small shards. Store them airtight at room temperature for up to 2 weeks. Sprinkle the shards over the foam at serving time; they crackle for about 5 minutes, so serve immediately.

Build the Latte
Add 2 tablespoons of syrup to a mug, pour in a shot of espresso and stir, then top with steamed milk and a thick cap of foam. Scatter the brûlée shards over the foam and serve right away.
Iced version: stir the syrup into cold milk and espresso, pour over ice, and top with cold foam and shards.
Storage
The syrup keeps in a sealed bottle in the fridge for 1 month. The topping keeps airtight at room temperature for 2 weeks — humidity is the enemy, so keep the jar sealed and dry.
FAQs
What if my syrup seized or turned grainy?
The sugar crystallized. Next time, add 1 teaspoon of lemon juice to the sugar before melting, and do not stir while it melts — swirl the pan instead.
What if my syrup tastes too bitter?
It went a little too dark. It is still great in small doses — use a tablespoon instead of two, or stir it into a milky latte, where the bitterness becomes depth.
I do not have a torch. Can I still make the topping?
Yes — the broiler works. Spread the sugar thinly, broil on high, and watch it constantly; it melts in 1–2 minutes and burns fast.
